Earlier this year I was lucky enough to get a volunteer spot in the South Beach Food and Wine Festival working with the amazing Johnathan Waxman of Barbuto in New York. He was a part of the Caja China pig cook off, in which many celebrity chefs cooked dishes centered around slow roasting pigs in Caja China’s (China Boxes).

The dish that I assisted with was Blood Orange Pork Tacos, I had a hand in prepping for each component of the dish and serving the finished project. It was such a great experience to be a part of such a famous event with an accomplished chef, and if it were not for Johnson and Wales, I would not have had the opportunity!
